Using lettuce as a wrap is a great, fresh, gluten-free alternative to bread! -Genevieve Ingredients2 cans solid white albacore tuna in water, drained1 15oz can chick peas, drained and rinsed½ cup red onion, chopped2 stalks celery, diced¼ cup sundried tomatoes, chopped¼ cup Kalamata olives, chopped½ cup parsley, roughly chopped2 T red wine vinegar 2 T olive oil1 T lemon1 tsp Dijon mustardFresh ground black pepper, to tasteBibb lettuce leaves for the "wrap"DirectionsIn a large bowl, combine tuna, chick peas, onion, celery, sundried tomatoes, olives, and parsley.In a separate bowl, whisk together red wine vinegar, olive oil, lemon, and Dijon mustard until well combined.Toss vinaigrette into tuna mixture and season with fresh pepper to taste.Spoon tuna mix into Bibb lettuce, fold over, and enjoy!
