This salsa has a bit of smoke, a bit of spice, and a taste that's nice! Try out this quick and easy salsa on Cinco de Mayo this year. Pass the lycopene please! -Gevevieve Ingredients6 Roma tomatoes, halved½ cup yellow onion, chopped2 cloves garlic, minced1 chipotle chili pepper1 jalapeno pepper, chopped with seeds (This makes a spicy salsa! If you prefer a mild salsa, remove ribs and seeds).¼ cup cilantro, roughly chopped1 ½ T Lime juice¼ tsp salt, or to tasteDirectionsPlace oven rack to the top third of the oven. Turn on broiler. Place halved tomatoes, skin side up on baking sheet under broiler and roast for about 5-10 minutes or until tomatoes char. Remove tomatoes from oven and let cool.Once cool enough to handle, place tomatoes and all other ingredients in a food processor.Pulse until desired consistency. For a chunkier salsa, pulse lightly until just combined. For a smoother salsa pulse for longer duration.Serve with your favorite tortilla chips or vegetable slices and enjoy!Click here for print-out.
