This recipe utilizes the core to maximize your bromelain intake and reap all the benefits it has to offer! -GenevieveIngreidents:2 ½ cups fresh pineapple, diced (about ½ a large pineapple) - core reserved1 cup red onion, chopped1 ½ cups cherry tomatoes, chopped1 orange bell pepper, chopped½ a jalapeno, chopped with seeds reserved (If you can handle the heat! Discard for a mild version)¼ cup cilantro, choppedCore of pineapple, chopped into chunks½ inch ginger, peeled1 limeDirections: Combine pineapple, red onion, tomatoes, bell pepper, jalapeno, and cilantro in large bowl.In a food processor, combine pineapple core, ginger and juice from lime until smooth.Add pineapple core mixture to other ingredients.Toss and season to taste.Serve with tortilla chips or as an accompaniment to your favorite entrée.
