New Year, new blog posts! We're going to kick of our first featured product of the month with Hedgehog mushrooms!Easy to identify by their small 'tooth-like" spines under the cap, Hedgehogs are just coming into season here on the West Coast of Canada and the United States. They couldn't come at a more perfect time to be included in hearty, healthy meals to start of the new year. For those trying to stick to New Year's resolutions, they are great way to add another dimension of depth to a meal without adding too many calories.Reminiscent of Chanterelles, they have a more subtle nutty, sometimes fruity, taste that can mellow out with cooking. They're easy to cook and the perfect mushroom for children or picky adults who otherwise wouldn't like other wild mushrooms.Like most mushrooms, Hedgehogs are delicious when sauteed with butter to compliment a great steak or they can serve as the main on their own when stacked on crostini and garnished with rosemary.We prep the mushrooms as best as we can before packaging them up, however we do recommend that once you have them home and are getting ready to cook them, make sure to wash them under running water and let them dry on some paper towel. Hedgehogs will keep in the fridge for up to a week if stored in a paper bag between damp paper towels.Stay tuned for some recipes featuring these lovely little mushrooms and let us know if you have any recipes of your own that you would like to share!
