Blue crab lovers looking for a bold seafood sauce with a kick can get a bold flavor enhancer that will transport them back to 1920's Tampa and the glory of days of Ybor City. It's called "Crab Chilau" aka Crab Enchilado, a forgotten dish, known only to the natives of the Tampa Bay area which dates back to the 1920's when the Ybor City district was bustling with life, culture and ethnic street food. Introduced by Cuban immigrants and further influenced by Italian, Spanish and Tampa's African American community, Chilau is as identifiable with Tampa as Gumbo in New Orleans. Michael's version is a concentrated condiment which he describes as bold low-country/gulf-coast flavor with plenty onion, bell pepper, celery, garlic and a spicy kick of cayenne pepper! Chilau is also known as enchilado, enchilau, shalla (shala), shilaw, shilah to name a few, but one thing all Tampa natives agree on, it's damned good!
