Some foods are simply addicting. It starts for most of us growing up smelling Mom or Dad's cooking and counting down the minutes until we heard them shout "Come and get it!" For Jean's family, that was especially true. With four boys and her husband she had a household to feed, and they loved her cooking. As the years went on, and Jean's family grew with four daughter-in-laws and lots of grandkids, there were a lot of mouths waiting to satisfy their craving of her special Tacos and Salsa. She would start making the salsa at least a day ahead of time, chopping and prepping enough to often feed easily 20 people. Only these 20 family members ate like they were enjoying an all you can eat buffet, so she made enough to feed a small army in order to satisfy this group. Making the Salsa ahead ensured enough time was given to ensure peak flavor from her secret ingredients, packed with fresh vegetables and seasonings. Then she would start the meat early in the morning for dinnertime, and you could smell it throughout the house. Slow cooked and seasoned for over 10 hours, then cooked down to perfection the shredded beef was carefully and lovingly prepared. By the time dinnertime rolled around you would have thought there was a taco-eating contest happening at the dinner table. I remember the first time I was invited to join the family for one of these special dinners, it was every person for themselves. Jean was the one cooking the shells by skillet and prepping each one by hand. We had to take turns 4 at a time at the table, because she would serve the tacos until one person was done and another could take their place. Yes, those of use new to the process learned a lesson in patience while we watched the lucky ones eat first. It's not all that different today at SHREDDED TACOS. If you're walking by Shredded in the morning, the smell from our chefs cooking down the meat on the grill, it gets that craving stirring in our brain. Prompting a quick check of the time to see if by chance it's even close to lunchtime (you know just in case). And usually, just like the dinner table at Jean's, when you do get there, there's a few other folks in front of you, and you're patiently waiting your turn to get your food. Because just like Jean, our cooks are carefully and lovingly preparing your meal as you wait. We cook our shells for that perfect crunch and prep your tacos with fresh ingredients. We cook your quesadilla to perfection and serve it hot off the grill.
