3 Tbs Gelatin 3/4 c Cold Water 1-3/4 c White Chocolate Chips or Wafers (break wafers into smaller pieces in a food processor) 2/3 c Sweetened Condensed Milk 200mL Clear Corn Syrup 200mL water 1 1/4 c Granulated Sugar Sprinkle gelatin over 3/4 cup cold water and allow to sit and bloom. Pour white chocolate and sweetened condensed milk into large, heat proof container Separately, bring corn syrup, 200mL water, and sugar to a simmer in saucepan on low heat until sugar is dissolved. Pour Gelatin mixture into chocolate. Pour heated sugar mixture into large container with all other ingredients, stir lightly, and allow to sit 20-30 seconds to soften chocolate. Blend with stick blender until smooth. Place plastic wrap direct onto surface of mixture and place in refrigerator overnight. When ready to use, warm mixture in microwave until smooth. Should be poured over very cold or frozen dessert when mixture is at 90 degrees Fahrenheit.
