We smoke our own meats at the Bluebird. Maple-smoked Brisket, Pork, Chicken, and occasionally Whitefish (Although we often use Carlsons smoked whitefish). Our Brisket and Pulled Pork are smoked for several hours, then slow-roasted for 10 - 12 hours, where we achieve a tenderness and juicy, flavorful taste that will impress the most BBQ-centic enthusiast.
