Explaining the wedding cookie tradition to out of town guests always leaves them with a curious look on their face. It is a "Pittsburgh" tradition and one you will enjoy!!! It brings the neighbor's, friend's, Grandma's, Aunt's & yes Uncle's together to bake and enjoy the variety and creativity of each others talent. Your out of town guests will be delighted & amazed at the table, all the cookies to enjoy and if your lucky, you will get to take some home for midnight snack or breakfast in the morning!I have added a gluten free recipe for all to enjoy, happy baking!Gluten Free SmoresPreheat oven to 350 and line 8" pan with foil5 broken gluten free graham crackers (whole)3/4 c gluten free flour1/2 c packed brown sugar1/4 c cold butter (unsalted) cut into pieces1 large egg6 Tbs heavy whipping cream2 - 4oz chocolate bars, broken into pieces2 c mini marshmallowIn blender, process crackers until finely ground, add flower & sugar then process again. Add butter until blended. Add egg and blend until moist. Press crumb mixture into pan. Bake for 15 minutes and cool completely,In heavy saucepan cook cream over med heat to 180 degree or until tiny bubbles form around edge, DO NOT BOIL. Remove from heat add chocolate, stirring until smooth. Fold in marshmallows and spread over crust. Chill 3 hours. Remove from refrigerator flip pan and easily remove foil, cut into bars.Add to your next Pittsburgh Cookie Table!
